If the wear indicator light hasn't triggered, is it possible to re-use the sensor, making it even easier by not having to trace back to the sensor connector?

Yes on the sensor issue - if it hasn't worn through you can re use - ie you can use it if worn but to a certain amount

Not entirley certain but is there not some procedure involved on the rear set up with the EPB mechanism and making sure it is re-adjusted

No, I don't think so. The EPB components are in the drum and you're not going there just to change the disc pads.
A word of caution, though..
