Yesterday afternoon I'd just started a journey when suddenly the engine started noisily racing and the rev counter leapt up to twice it's normal reading.

Is it at a gear up-change point? Low transmission fluid or torque convertor issue? |

If it bothers you, you can turn the paddles off using the menu available from the steering wheel. Well, you can on mine!

No...the option to disable them doesn't appear in the little window so we're stuck with it.

Ha ha, the silly round gear selector is what appealed to me over the stick - sticks are for manuals...! Maybe it's the same with newer models, but Jaguar have it sorted as my XF (with silly round selector) could have paddles disabled when in Drive, with just a quick change to Sport and have use of paddles. Makes sense to me as D can be for lazy driving, then S for offroad, manual control, or whatever. It begs the question if Jaguar can isolate the paddles when in drive, then why can't the same parent company using the same basic equipment do the same in a Range Rover?

You, should be able to turn them off, I believe, (or a JLR dealership) using a GAP Diagnostic IID BT tool if you have one.
