I'm thinking about putting my Nexus 7 tablet in place of the factory sat Nav screen but understand that if I remove the sat Nav screen I will need to bridge the fibre optic cables in the MOST system.

Yes, have done this plenty of times, no problem. easiest way is to use a Most Loop, commonly used on Audi's.
