Brake fluid change

Hi guys
Going o renew my brake fluid and pads all round soon and just wondered is there anything
I need to know has to bleeding brakes on the rrs 2005?
I use the ezibleed system which really does a great job,but just want to be sure not going to upset anything in the car
If I do a bog standard bleed etc

that's fine, just make sure the reservoir doesnt go empty (as all other cars really)

I was always told to start with bleeding the wheel the longest away from the brake reservoir and work way forward to the nearest last
Dunno if it really matters?
Also if I change the discs also on the rear and wind down the handbrake mechanism through the inpection hole on the disc
How many times do I turn it back to release it? Some say 8 some say 5? And I'm guessin handbrake is off before I wind it down to tighten the disc first before releasing
