If it's a 55 plate it will have to be done manually via pressing the mirror adjuster down when it's set in the middle position.
Newer models close on locking.

How much newer ?
ok, im intrigued now. On my 57 plate v8 the only way to get the mirrors to fold in is to manually push down on the middle of the adjuster button, though the mirrors auto dip when in reverse, should they also auto fold in on lock? 07,TDV8,Black, Black Heated leather all round, Rear Entertainment with Headpones & Remote, TV, DVD, Pure Dab Digital Radio, Sidesteps, Adaptive Headlights, sunroof, now working fuel burning heater Smile)))

England 2013 Range Rover Sport SDV6 Autobiography Santorini Black

Not sure exactly but on my 06 they close by pushing the wing mirror adjuster down (when in the middle setting), on my 2013 (Rrs 1) it's automatic when I lock the car.
The auto dip your talking about can be set to happen automatically when you put it in reverse (I didn't know you can do it manually)

To fold the mirrors in you can do any time even when you have just turned the car off by pushing down on the adjuster (but obviously from what you have said, exept when your in reverse!) RRS HSE with a few extras & a
