I've been in contact with the Icelandic Land Rover Club for some more info and here is the reply I have received - the X Iceland trip sound fun, but could be a bit of an endurance test!

Regarding preperations to your car, i would recommend the following. Good
tyres, a snorkel and some underbody protection.
The tyres you should have on are not the low-profile tyres that come with
the RR Sport, some higher M+S tyres are recommended. Last fall i had the
opportunity to try a Discovery 3 with the Land Rover experience
modifications done, and the tyres they have on there are wery good.
Unfortunaetly, i can not remember what type of tyre that was, but they we´re Good Year brand.
Snorkel, why? Well, you will probably be crossing the inlands of Iceland,
and there are many rivers and streams who don´t have a bridge, and getting water into your engine is probably the worst thing that can happen to your car, fitting a snorkel will ease those worries.
Underbody protection, Well, it´s Iceland. That means rough gravel roads,
lava and rocks. It´s much easier to hear that crunch sound coming from under the car when you know there´s protection there.
Accomodations. Around Iceland should not be a problem except in the capital area, there might be a problem finding available hotelrooms. Book hotelrooms in Reykjavik in advance if you can, then you should be ok.
Camping is o.k. might be a bit cold, but dress well and enjoy the Icelandic countryside. The average temp in August is about 15°c. It does start to be a bit colder in September, especially at night.

You might like to know that the Icelandic Land Rover club are thinking about planning a 2-3week trip around Iceland in the summer of 2007. The idea is to call it "crossing Iceland" as the idea is to do just that, drive across
Iceland as it would look like an X over Iceland on a map, from the most
north-eastern point to the most south-western point, and then from the most north-western point to the most south-eastern point, crossing the most rough and inhospitable, yet most beautiful outbacks of Iceland. The areas we Icelanders know about, but is not found in brochures.
This is still on the "idea" stage, but we are looking into if somebody would
like to participate.
If you´re interrested and would like to participate, let me know. If there´s
enough positive feedbacks, we´ll go ahead with this.
